Ingredients
Pie
1 pie crust
6-8 large apples of choice (I recommend Granny Smith)
1/4 cup dark brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
2 tbsp unsalted butter
1/2 cup heavy cream
1 tsp lemon juice
Topping
2/3 cup all-purpose flour
1/3 cup old-fashioned rolled oats
1/3 cup dark brown sugar
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
Directions
Prepare a pie pan by greasing the sides and bottom. Place pie crust in pan and crimp or roll sides. Bake per directions (typically 425 F for 10-15 minutes). Take out of oven when done and set aside.
Place oven on 425 F to preheat if needed.
Peel and decore the apples. Slice apples into 1/4-inch thick pieces.

Combine sugar, cinnamon, nutmeg, and salt in a large bowl. Add apple slices and mix until well combined.

Warm a pot on the stove over medium-high heat. Add in butter.
Once the butter is melted, add the apple mixture and lemon juice. Cook while stirring occasionally until tender (about 10 minutes)

Remove the apples from the stove and strain the liquid through a colander. Set the apples aside and return the juices to the pot.
Add heavy cream to it and continue to cook over medium-high heat, allowing the liquid to thicken (about 5 minutes). Remove from heat.
Fill the pie shell with the apples. Then, pour the cream/juice mixture over the top.
In a large bowl, combine all the ingredients for the streusel topping and toss until evenly
moistened. The mixture will begin to form large chunks. Sprinkle evenly on top of the pie filling.

Place the pie on a baking sheet (in case of spillage) and bake for 10-20 minutes, until the streusel is golden brown.
Allow to cool before serving.
